This Chilli Con Carne loaded potatoes recipe is incredibly delicious and creates a warm comforting meal that is perfect for any occasion and any time of the year. This recipe is easy to put together, relatively cheap and of course, tastes amazing. Also in this chilli recipe, we also bake some potatoes to perfection with soft fluffy centres and nice crispy skin. This is all topped with sour cream and spring onion (scallion) creating a beautiful masterpiece. Please sit back, relax and enjoy.

Serves – 4

Ingredients –

Chilli Con Carne –

1 Tbsp (20ml) – Olive Oil
1 – Brown (Yellow) Onion, Diced
1 – Spring Onion (Scallion), Thinly Sliced (Green Stem Used For Garnish)
5 – Garlic Cloves, Minced
1 – Jalapeno, Sliced
1 kg (2.2lbs) – Beef Mince (Ground Beef) – I used 90% Lean 10% Fat
10g (0.35oz) – Ground Cumin
1 Tbsp (2g) – Dried Oregano
2 tsp (5g) – Smoked Paprika
1/2 tsp (1g) – Cayenne Pepper
2 Tbsp (35g) – Concentrated Tomato Paste
1/2 Cup (125ml) – Beef Stock
2 Cans (800g-28oz), Diced Tomato
1 Can (400g-14.1oz) – Kidney Beans, Washed
5g (0.2oz) – Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste

Baked Potato –

4 – Large All Rounder Potatoes,
1 Tbsp (20ml) – Olive Oil
Seasoning To Taste

Topping & Garnish –

Mozzarella Cheese, Freshly Grated
Sour Cream
Green Stem Spring Onion (Scallion)
Sea Salt Flakes
Cracked Black Pepper

Recipe Notes –

To store, place the Chilli Con Carne in the fridge for up to 4 days and in the freezer for up to 6 months, both stored in an airtight container. The potatoes will also last the same amount of time. It also doesnโ€™t matter if the potatoes are stuffed and you wish to store them in the fridge or freezer.

To reheat, place the chilli in a pot over medium heat and heat gently until hot throughout, mixing it regularly. Alternatively, it can be placed into the microwave and heated in bursts, mixing between each one. To reheat the assembled potato and chilli, place it into a preheated oven set at 170.c -4 340.f and heat for 12-15 minutes or until hot in the centre. This can also be done in bursts in the microwave. Do whichever is easiest for you.

Please Note * This recipe makes more Chilli Con Carne than necessary to fill the 4 potatoes listed in the ingredients. The reason I decided to do this is to have leftovers that can be placed in the fridge or freezer for a later date. As our lives become busier, it gets harder to have the time to cook dishes that require an hour or two to make so when making such a dish, having leftovers is a bonus. If you wish to not have leftovers, half the recipe.
