This is an Easy Christmas Cake recipe that you don’t have to prepare ahead of a time to make. No soaking of fruits needed. It is simple and super moist that’s covered with marzipan.
Also I wanted to make a relatively smaller cake this year when most of us cannot celebrate the festive seasons with loved ones!!

INGREDIENTS:
FRUITS 400G
-75g Dates
-75g Black raisins
-75g Golden raisins
-50g Dried cranberries
-75g Candied peel
-50g Pineapple tidbits
(If you cannot find all these types of fruits use fewer variety of 400g worth of fruits (If you can only find Raisins and cranberries use 200g raisins and 200g cranberries 🎈LOCKDOWN TIP😉)
NUTS 60G
-30g Pecan, chopped
-30g Almonds, chopped or sliced
(You can use what ever the nuts available for the weight of 60g 🎈)
-125g Black tea (I am using black tea to balance the citrus flavors of the cake. As I am not using alcohol in this cake Black tea helps to balances the citrus/sweet flavor
-100ml Orange juice, from an orange
-Zest of an orange
-Zest of a lime, or you can use lemon
-120g All purpose flour
-80g Dark brown sugar (If you are using light brown sugar use 100g)
-2 large eggs, room temperature
-1/2 tsp Baking powder
-1/4 tsp Cinnamon powder
-1/4 tsp All spice
-1/4 tsp Nutmeg
-Orange/cranberry juice to feed the cake
MARZIPAN:
-120g Almond flour/meal
-120g Confectioners/powdered sugar
-1 large egg white
-1 tsp Rose essence
🔴Put marzipan when the cake is ready to be eaten. Till that time keep the cake while feeding it as needed
PAN:
8 inch pan buttered and lined with 2 layers of parchments
BAKE:Pre heat oven to 300F/150C for about 20 minutes and bake the cake for 55-60 minutes, until a skewer inserted comes out clean
🔴STORING:
-Since I am not using alcohol in this recipe you should keep the cake in a cold place or in the fridge. If you keep in the fridge feed the cake more often than usual. Feed once in two days to keep it moist. Keeping in the fridge tends to dry down the cake faster.
-I wrapped this cake with plastic wrap and kept it in an airtight container in our garage. It is winter season here so the garage is pretty cold compared to inside our home.
🔴FEEDING THE CAKE:
-Depending on where you store it feeding should change slightly. If you store in a cold place, little below room temperature, feed 2-3 tbsp of orange juice once in 3-4 days
-If you are storing the cake in the fridge feed it once in 2 days to keep it moist
