Recipe: (Makes 30 cookies)
3/4 C. Unsalted Butter (room temperature) (170g)
3/4 Granulated Sugar (160g)
1 Egg
1 tsp Vanilla
Pinch of Salt
2 1/4 C. All purpose flour (about 310g)
For the filling:
2 Tbsp Unsalted butter
1/3 C. Granulated sugar (you can use brown) (67g)
2 tsps Cinnamon (or to taste)
For the icing:
1 Cup Powdered sugar (125g)
2 Tbsp Water
