Classic Pan De Coco (COCONUT BUNS)
How to make the classic Pan de Coco or Coconut Buns.
This recipe yields 16 pieces of yummy coconut buns.
Here’s what you’ll need:
FILLING:
1/4 cup salted butter (55g) (If using unsalted, you can add a pinch of salt)
1/4 cup sweetened condensed milk (50g)
½ cup brown sugar (100g)
2 cups grated coconut meat.
DOUGH:
1 cup milk (250ml) (room temp) (Fresh milk, uht or coconut milk will do)
1 egg
2¼ tsp instant yeast (7g)
¼ cup sugar (50g)
3 ¼ cups all purpose flour (406g)
1 tsp salt (5g)
1/4 cup softened butter (50g)
Eggwash: 1 egg yolk + 2 tablespoon milk
