Cooking Pink Eyed Purple Hull Peas from the Garden
Cooking Pink Eyed Purple Hull Peas grown in the Deep South Texas raised bed garden. I have one 3 foot by 8 foot raised bed growing Pink Eyed Purple Hull Peas this year. They were planted in early May and I began harvesting them 2 weeks ago. About 60 days from planting the seed to harvest. Here is the recipe I use to cook them. They are amazingly good. Recipe ingredients below.

2.5 cups fresh Pink Eyed Purple Hull Peas (also known as Southern Peas or Cow Peas)
6 slices of Bacon cut into 1 inch pieces
1 large, or 2 medium Onions. Roughly chopped
4 cloves Garlic, minced
1 quart Chicken Stock
Salt and Pepper to taste.
Simmer for 2 hours

While not in this recipe, a couple tablespoons of hot sauce is a good addition.
