Creamy Ube Halaya (Purple Yam Jam) Fast and Easy Recipe
Ube halaya or halayang ube is a Philippine dessert made from boiled and mashed purple yam. Ube halaya is also used in pastries and other desserts such as halo-halo and ice cream and cakes.
I’ve been using this recipe in all my cakes and bread. Soft and creamy, so easy to pipe and spread.
Here’s what you’ll need:
700grams ube or purple yam + just enough water to cook it until tender.
1/4 cup salted butter (50g)
1 cup coconut milk 200g
1½ cup evaporated milk (300g)
¾ -1 cup depending on your sweetness meter 🙂
