Delicious Carrot Cake Recipe | History Of Carrot Cake
This is a delicious Carrot Cake recipe. While we bake, we learn the history of carrot cake.

What you will need in order to make this award-winning carrot cake:
Preheat oven to 350degrees F.
2 Cups Flour, all-purpose or gluten-free rice flour mix
2 tsp Baking Powder
1 1/2 tsp Baking Soda
1 1/2 tsp Salt
Mix these ingredients together until well combined.
2 tsp Cinnamon
1 Cup Brown Sugar
2 Cups Granulated or Bakers Sugar
2 Cups Peeled, grated, chopped carrots.
1 Cup Drained, Crushed Pineapple
Mix ingredients together well
4 Lage Eggs, Wisk them now to avoid over mixing the batter
10 FOZ Oil, I prefer vegetable oil, but any kind will do.
Spray cake pans with nonstick spray. Or use wax paper and spray the paper with nonstick spray. Do this before you add the wet ingredients to the dry because once all the ingredients are combined you’ll want to move as quickly as possible to get the cakes in the oven.
Add the wet ingredients to the dry and mix until *just* combined. This is the only part of the video that is in real time.
Immediately fill cake pans. Tap the bottom of the cake pan softly on the table or countertop before placing in the center of the oven. Make sure the oven rake is also in the center of the oven.
Bake for approximately 20 min.
Cream Cheese Frosting (Cream Cheese Icing)
1/2 room temperature butter
place in a mixer and whip until fluffy
1 Lbs room temperature cream cheese
add 1/2 at a time. mix until fluffy. I use medium speed and let mix for 20 minutes, scraping the sides down about every 5 minutes.
2 lbs Powdered Sugar. Mix in 1/4 cup at a time. Once the frosting is smooth add about 2 Tablespoons of no pulp Orange Juice. Let the mixer run another few minutes.
When the cakes are done, remove them from the pans while they are still hot. Let cool before frosting. I cut the tops off my cakes. Use a generous amount of frosting between layers and on top.
If you want to garnish the cake, a few grated carrots on top is nice. Or even a little orange zest mixed in with the frosting. As you can see, I skipped all that in this video 🙂
