Cranberry Beans with Olive Oil

Cranberry Beans with Olive Oil Recipe

Prep time: 10 minutes
Cooking time: 8 minutes

500 g fresh cranberry beans
2 carrots, sliced
1.5 onions, diced
2 tomatoes, grated
4 cloves of garlic, chopped
200 ml water, 4/5 cup
6 tablespoons olive oil
1.5 teaspoons granulated sugar
1 teaspoon salt

• Heat the olive oil in a pressure cooker and sweat the onion and garlic until they are soft, without colouring. If you don’t have a pressure cooker, you can use a pot as well.
• Add carrots and sauté for a few minutes.
• Add the cranberry beans, sugar, salt, tomato and water. Double the water if using a regular pot.
• Close the lid of the pressure cooker. Set the pressure to high. When the lid is tight and the pressure is enough to cook, place the pressure cooker on a small burner on low heat.
• Cook for 8 minutes and release the pressure by removing the lid or putting the pan under running cold water. If using a regular pot, cook until the beans are fork tender
• At the end of 8 minutes, turn off the heat and remove the steam from the pot.
• Transfer on a dish, drizzle some olive oil on top, sprinkle some chopped parsley and serve.
