Derekkchen – Karaage (recipe in description)
Ingredients
– 4 chicken thighs(cut into bite-sized pieces)
-2 tbsp soy sauce -2 tbsp sake
-2 tbsp mirin
– 1 tbsp fish sauce
– 2 cloves garlic(grated)
– 2 tsp ginger (minced)
– 1/2 tsp msg
– 1/2 tsp white pepper – 1/2 tsp salt
– 1 cup potato starch
– Neutral oil for frying
Instructions
1. In a bowl, combine chicken with soy sauce, sake, mirin, fish sauce,
garlic, ginger, msg, white pepper, and salt.
2. Let marinate in the fridge for 2 hours. 3. Dip chicken in potato starch.
4. Let chicken rest with potatoes starch coating for 3 minutes.
5. Fry chicken in oil at 350°F for 5 minutes. 6. Raise oil temperature to 375°F and fry for another 1 to 2 minutes or until
golden brown and crispy
7. Serve with Japanese Mayo and lemon.
