Hi there!

I’m with my beautiful daughter and her family in South New Jersey for a birthday, Easter & Spring Break visit all rolled into one!

Daughter Nicole is baking a lamb cake for Easter Sunday.

Nicole shows step by step how to make this gorgeous cake.

This is a family recipe from the kids’ paternal grandfather’s side of the family. Nicole’s been making this cake for many years, and the kids look forward to it every year. They always argue about who gets to eat the lamb’s head. Enough said on that topic!

The cake is a very dense white/vanilla cake and reminds me of a pound cake. The frosting is cooked on the stovetop, is really delicious, and has a light, sweet texture. It seems almost like a combination of whipped cream and marshmallows.

The frosting recipe calls for super fine sugar. Nicole makes her own using regular granulated sugar and a coffee grinder.

The cake is decorated with sweetened shredded coconut and jelly beans.
