Green Shakshuka Recipe
I am in love with this green shakshuka!
It’s jam packed with fresh greens and tons of flavor for seriously the best breakfast of all time.
I feel like if I could start each day with this, I’d feel a lot better.

Starting this green shakshuka by roasting up the vegetables in some omega-9 rich @ThriveAlgaeOil (#ad), which is a heart-healthy fat, and has a super high smoking point up to 485° makes all the difference.

Ingredients for this Green Shakshuka Recipe:
• 2 tablespoons Thrive® Algae Oil
• 2 thinly sliced leeks
• 3 finely minced cloves of garlic
• 1 seeded and small diced jalapeño
• 1 thinly sliced green zucchini
• 2 cups packed baby spinach
• 1 bunch thinly sliced swiss chard, stems removed
• juice of ½ lemon
• 4 eggs
• sea salt and pepper to taste
• micro greens and fresh dill for garnish
Serves 4
Prep Time: 5 minutes
Cook Time: 25 minutes
Procedures:
1. Preheat the oven to 350°.
2. Add the Thrive® Algae Oil to a 10” cast iron skillet over medium heat.
3. Add the leeks, garlic and jalapeño to the pan and sauté for 1 to 2 minutes.
4. Next, add in the zucchini, spinach, swiss chard, salt and pepper and lemon juice and cook for 2 to 3 minutes or until the greens have lightly wilted.
5. Make 4 small wells into the greens and add 1 egg to each well.
6. Bake the pan in the oven at 350° for 20 minutes or until the desired doneness of eggs are achieve.
7. Garnish with micro greens and fresh dill.
