You’ll need
2 carrots
3 zucchinis
2 potatoes
2 long green peppers
2 capia peppers
1 head of garlic
For the Dressing:
60 ml of olive oil
2 tsp of dried thyme
1 tbsp of tomato paste
Salt
To Serve:
Natural yogurt
Here’s how
1- In a large bowl, combine 60 ml of olive oil with 2 tsp of dried thyme, 1 tbsp of tomato paste and salt.
2- Add strips of vegetables: 2 carrots, 3 zucchinis, 2 potatoes, 2 long green peppers, 2 capia peppers and cloves of garlic. Mix well to make sure all the veggies are coated with the dressing.
3- Line the veggies on a parchment lined oven tray.
4- Cover the veggies with another layer of parchment paper and secure the edges by folding inwards. This way, veggies will be cooked with their own juice.
5- Roast for 20 minutes in an oven preheated at 180°C.
6- Peel the top layer of the parchment off and roast for another 10 minutes until the veggies are roasted fully.
7- Serve the roasted vegetables on a bed of natural yogurt.
8- Enjoy!
