Taste testing my homemade Asiago Cheese at Deep South Texas. The cheese tastes OK but has developed a case of Late Blow. A bacteria in the milk causes this, and it is not fully removed by pasteurization. It can be eliminated by adding Lysolac to the milk when making cheese.
