Homemade Canned TOMATO SAUCE (with capia peppers)

Ingredients
4 kg of tomatoes
1 kg of capia peppers
15 cloves of garlic
75 ml of vinegar
2 tbsp of salt
75 ml of vegetable oil
2 sugar cubes
Preparation
1- Peel and cube the tomatoes.
2- Peel and deseed roasted capia peppers and chop roughly.
3- In a large deep pan, saute 15 cloves of chopped garlic with 75 ml of vegetable oil.
4- Add in tomatoes and peppers.
5- Add 75 ml of vinegar, 2 sugar cubes and 2 tbsp of salt.
6- Cook for about 2 hours by stirring occasionally.
7- Once the sauce has reached to desired consistency, blend the sauce with the help of a hand blender.
8- Pass the sauce into glass jars immediately while still boiling, clean the jar, close the lid tightly and flip upside down.
9- Once cooled down, keep in a dry dark place.
10- Refrigerate after opening and consume within 2 days.
