How to Make DIAMOND COOKIES
Diamond Cookies are one of my favorite cookie recipes. They are so good!

You’ll need

250 g of softened butter
½ cup of icing sugar
1 egg
2 tsp of vanilla sugar
2 tsp of baking powder
2 ½ tbsp of cacao powder
3 cups of all purpose flour

To coat:
Granulated sugar

To fill:
Chocolate spread

Here’s how

1- Combine 250 g of softened butter and ½ cup of icing sugar in a whisking bowl. Mix thoroughly until smooth and creamy.
2- Add in 1 egg, 2 1/2 tbsp of cacao powder, 2 tsp of vanilla sugar, 2 tsp of baking powder and mix until well combined.
3- Add approximately 3 cups of flour gradually and knead. The dough should be soft to the touch.
4- Take walnut sized pieces from the dough, roll into balls. Then, coat the balls with granulated sugar.
5- Place the balls on a parchment lined oven tray and make holes in the centers of each one.
6- Bake for 15 min in an oven preheated at 180 °C.
7- When the cookies cool completely, fill the holes with chocolate spread.
8- Enjoy!
