You may be familiar with buko salad, a mainstay dessert in almost every celebration in the Philippines, especially barrio fiestas and Christmas eve and New year’s eve dinners. Buko salad or sweetened young coconut salad uses shredded young coconut as main ingredient, along with your nata kaong, gelatin, cream, and other ingredients. You mixed them with milk and there you have your salad. The milk combines everything and creates a wonderful harmony among ingredients. This buko pandan salad is very much similar to buko salad. The only difference is that your gelatin is infused with pandan flavor. Pandan leaves are dropped into the gelatin mixture when cooking. You can also first boil water with pandan leaves before adding your gulaman mixture. The unique aroma makes this salad more appetizing.
