For the Caramel sauce:
1 cup sugar (110g)
1/4 cup water (40g)
1 tsp lemon juice (5g)
For the flan:
3 eggs + 3 egg yolks
1 can condensed milk (300g)
1 and 1/2 cup fresh milk or evap milk (300g)
For the Chocolate Sponge Cake:
4 egg yolks
1/3 cup sugar (75g)
1/3 cup warm milk (65g)
1/3 cup unsweetened cocoa powder (65g)
1/4 cup oil (40g)
1 teaspoon vanilla
1 cup all purpose flour (110g)
1 and 1/2 teaspoon baking powder
1/2 teaspoon salt
4 egg whites
1/3 cup white sugar (75g)
1/2 teaspoon lemon juice
