You’ll need
50 g butter
1 medium onion
2 tbsp currants
1 cup chestnuts
1 3/4 cups bulgur
500 ml chicken broth
Salt
½ tsp cinnamon
Parsley
Here’s how
1- First, melt 50 g of butter over medium heat.
2- When butter melts, add 1 chopped onion and sauté until beginning to brown.
3- Then add 2 tbsp of currants, 1 cup of boiled, peeled and coarsely chopped chestnuts and mix.
4- Add 1 3/4 cups of bulgur and sauté for 2 minutes longer.
5- Now, stir in 500 ml of chicken broth and salt, close the lid and let cook on low heat until bulgur is tender and all liquid is absorbed.
6- Turn off the heat, place a paper towel on the pot and cover the lid again.
7- Let the pilaf rest for 10 minutes, then sprinkle with ½ tsp of cinnamon and mix.
8- Finally, add some chopped parsley and mix.
9- Bulgur Pilaf with Chestnuts is ready to serve. Hope you enjoy!
