These Lamb shanks are beyond incredible and the moisture and flavours that is within are unbeatable. In my opinion, lamb is the most flavoursome meat/protein and the results that you can obtain from a perfectly cooked piece are too good. This lamb shank recipe is cooked into an easy to make maple and cumin stock-based sauce, reduced down to develop the flavours and results in juicy, soft and melt in your mouth lamb shanks. Serves – 4
Ingredients –
1 Tbsp (20ml) – Olive Oil
4 – Large Lamb Shanks
2 – Brown (Yellow) Onions, Large Diced
5 – Garlic Cloves, Roughly Chopped
1 1/2 Tbsp (15g) – Whole Cumin Seeds
1 – Long Red Chilli, Thinly Sliced or Halved Lengthways (Optional)
1/4 Cup (60ml) + 2 tsp (10ml) – Maple Syrup (Don’t use Maple flavoured syrup)
2 1/4 Cups (560ml) – Chicken Stock
1/2 Bunch – Silverbeet, Trimmed
1 Can (400g-14.1oz) – Chickpeas, Rinsed
Seasoning To Taste
Nut Topping –
1 Tbsp (20ml) – Olive Oil
40g (1.4oz) – Pistachio Nuts, Roughly Chopped
40g (1.4oz) – Flaked Almonds
