I have a new MUST TRY dinner recipe for you today!
Chicken tortilla soup has been a long time favorite of mine, but I spent years having to miss out on it since I wasn’t eating meat. I’m happy to say tho that I recently made this recipe and it was all I’ve dreamed of and more 🙌🏻

Here are the details:
2 chicken breasts, boiled and shredded
Boil chicken breasts until cooked thru then remove and shred in your stand mixer. Make sure to save 1 cup water from the boiled chicken.
1 Tbsp avocado oil
1/2 yellow onion, diced
3 cloves garlic, diced
1/2 head cauliflower, chopped into small pieces
4 small carrots, peeled and chopped into small pieces
1/2 cup frozen corn
Add all veggies to pot with avocado oil and cook until soft.
1 cup chicken water
3 cups water or veggie/chicken stock
2 cans diced tomatoes
1 can black beans, drained and rinsed
1/3 cup dry quinoa
Spices:
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1/2 tsp cayenne powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp each: salt + pepper
1 tbsp cilantro
1 tsp soy sauce
Juice from 1 lime
When veggies are cooked, add in water/stock, tomatoes and spices and let simmer for 5 minutes. Then immersion blend so the mixture is still chunky, but has a creamy base. Then add in chicken, black beans, quinoa, and spices cover and simmer for 15-30 minutes.
Serve topped with cheddar cheese, yogurt/sour cream, chips and hot sauce!
