Teriyaki Chicken Skewers (Yakitori)
These teriyaki chicken skewers are easy to cook, don’t require fancy ingredients and taste amazing. Served alongside is a delicious carrot and parsnip stir fry, and together, this meal creates the perfect flavour and aroma combination.

Serves – 2
Ingredients –
Chicken & Teriyaki –
1 Tbsp (30ml) – Peanut Oil
6 – Large Chicken Thigh, Boneless & Skinless, Diced
5 – Spring Onions (Scallions), White Root End Sliced Into 4cm Strips, Green Stems Thinly Sliced
1 1/2 Tbsp (30ml) – Soy Sauce
1 Tbsp (20ml) – Dark Soy Sauce
2 Tbsp (40ml) – Mirin
2 Tbsp (40ml) – Cooking Sake
1 1/2 tsp (7.5g) – Granulated Sugar
Seasoning To Taste
Carrot & Parsnip Stir Fry –
1 Tbsp (20ml) – Peanut Oil
2 – Carrots, Julienned
4 – Parsnips, Julienned
1 Tbsp (20ml) – Soy Sauce
1 Tbsp (20ml) – Mirin
1 tsp (5ml) – Toasted Sesame Oil
1 tsp (4.5g) – White Sesame Seeds, Toasted
1 tsp (4.5g) – Black Sesame Seeds, Toasted
Seasoning To Taste
Nut Allergies –
If you have a nut allergy or don’t want to use peanut oil, sesame oil and sesame seeds, they can easily be substituted or left out completely.
Peanut Oil – Substitute with vegetable, sunflower or canola oil
Sesame Oil & Nuts – Leave Out
Teriyaki Sauce Notes –
Sake is a Japanese wine made from fermented rice. It is also commonly used in Japanese cooking, usually in sauces or marinades. Sake can be substituted for 1 part rice wine vinegar to 3 parts water, so for this recipe, you will need 12.5ml rice wine vinegar and 27.5ml of water.
Mirin is a Japanese rice wine similar to Sake. Mirin has a lower alcohol level than Sake but contains more sugar. For those that can’t consume alcohol, it can be substituted for 1 part sugar to 3 parts water, so for this recipe, you will need 10g of sugar and 35ml of water.
Ingredients if you don’t consume alcohol –
Makes – 130ml
30ml (1 1/2 Tbsp) – Soy Sauce
20ml (1 Tbsp) – Dark Soy Sauce
1 1/2 tsp (7.5g) – Granulated Sugar
80ml (1/3 Cup) – Vegetable or Chicken Stock
Both soy sauces are interchangeable which means you can use one for the other or omit one completely. If you don’t use dark soy sauce the teriyaki sauce will be much lighter in colour.
Chicken Notes –
I’ve used 6 large chicken thighs in this recipe, resulting in 8 skewers with 4 pieces of chicken on each. If you wish to make more, this recipe can easily have more chicken added without needing to add any other ingredients. If you plan to make more and serve more than two people, it is recommended to increase the number of carrots and parsnips.
