WATALAPPAM/ Coconut custard/ Jaggery Pudding
This is a simple recipe to make WATALAPPAM.

Some call jaggery pudding or coconut custard. I am using brown sugar instead of jaggery…

Ingredients:
6 large eggs
2 cups of dark brown sugar (to get the darker color to the pudding)
1 can of coconut milk (400ml)
3 to 4 cloves of cardamom cloves-chopped
1 teaspoon of vanilla extract
Cashew nuts
Baking time is one hour in 375F, or little longer if needed..

—-Coconut Milk I am using: 3

How to make:

1.Beat eggs in a bowl, can use a beater if you prefer

2.After beating the eggs start adding brown sugar and coconut milk little by little..Make sure everytime you add sugar that it beats well to dissolve with the other ingredients..

3. Add chopped cardamom

4. Then add the vanilla extract, give a good mix…

5.Add some chopped cashewnuts on top

6. Prepare the baking pan in a water bath.. add 1 inch of lukewarm water to the outer pan.. then add the watalappan mix to the baking pan, cover with a foil

7. Bake for an hour in 375F.. after an hour insert a fork in to the middle of the watalappan and see if it comes out clean, if so it’s done…if not leave for another 15 minutes…

8.Add more cashew nuts to garnish on top…chill the pudding and enjoy…
