Ingredients –
Marinade –
750g (1.6lb) – Boneless Chicken Thigh (You can use bone-In)
1/3 Cup (80ml) – Soy Sauce
110ml – White Vinegar
4 – Garlic Cloves, Grated
3 – Dried Bay Leaves (4 if using fresh)
Sauce –
1 Tbsp (15ml) – Olive Oil
1 – Medium Brown Onion, Diced
3 – Garlic Cloves, Roughly Chopped
2 Tbsp (27g) – Brown Sugar
1 Tbsp (5g) – Whole Black Peppercorns (I used 2 Tbsp in the video but suggest only 1 Tbsp)
300ml – Cold Water or Chicken Stock
Rice –
1 Cup (200g) – Basmati Rice, Washed
1 1/2 Cups (375ml) – Cold Water
1/2 tsp – Sea Salt Flakes
1 – Bay Leaf (Optional)
1 – Star Anise (Optional)
3 – Cardamom Pods (Optional)
1/2 – Cinnamon Stick (Optional)
