You’ll need

2 tbsp butter
120 ml vegetable oil
120 ml water
120 ml milk
1 egg
1 tbsp vinegar
A pinch of salt
4 cups all-purpose flour
Crushed walnuts

To roll the dough;
Starch

For the top;
200 g butter
60 ml vegetable oil

For the syrup;
2 + ½ cups granulated sugar
700 ml water
Lemon juice

Here’s how

1- In a deep bowl, combine 2 tbsp of butter, 120 ml of vegetable oil, 120 ml of water, 120 ml of milk, 1 egg and 1 tbsp of vinegar and whisk. Then, add a pinch of salt and 4 cups of all-purpose flour and start kneading. Knead until the dough is smooth.
2- Divide the dough into 20-21 equal pieces and roll each piece into a ball.
3- Cover the balls with cling film to prevent from drying out and let them rest in the fridge for 30 minutes.
4- Dust the first dough ball with starch, flatten out the ball and roll out into a thin circle.
5- For nightingale’s nest, divide the circle into 4 pieces, sprinkle crushed walnuts on top and roll with a stick. Then, from the two ends of the rolled dough, press with your hands towards the middle, remove the stick gently and close the ends of the dough.
6- For baklava rolls, continue the same way without closing the ends of the dough.
7- For half-moon baklava, layer 2 circles and sprinkle crushed walnuts on top. Finally, layer one more circle on top, then, from the two edges, fold towards the middle. Using the mouth of a glass, cut out half moon shape from the dough.
8- Place all the baklava on the tray.
9- Strain 200 g of melted butter and 60 ml of vegetable oil mixture to get rid of the foam.
10- Then, pour evenly all over the baklava.
11- Bake in an oven preheated at 170 degrees about 1 hour until golden.
12- Meanwhile, make the syrup. Bring 2 + ½ cups of granulated sugar, 700 ml water and few drops of lemon juice to a boil and cook for 10 to 15 minutes.
13- When baklava looks golden on the tops and edges, take it out of the oven and pour the hot syrup over the hot baklava.
14- Here is the truly delicious baklava. Let it soak the syrup and decorate with pistachios and serve!
