Banana Bread Recipe
Today I’m sharing with you my favourite Banana Bread Recipe. It’s a simple and easy recipe to follow that will give you a perfectly moist banana bread. Perfect recipe for weekend breakfast / brunch or for enjoying with a cup of coffee or tea.
Make sure to use over ripened bananas in this recipe, it is what gives the bread sweetness and flavour.

Recipe
2 Cups / 16 oz / 250g Plain Flour
1 Teaspoon / 0.16 oz / 5 ml Baking Soda
1/4 Teaspoon / 0.04 oz / 1 ml Salt
3/4 Cup / 6 oz / 150g Brown Sugar
3-4 Over Ripe Bananas
2 Eggs
1/3 Cup / 2.6 oz / 80 ml Vegetable or Canola Oil
Whisk the dry ingredients together in a bowl. Mash the over ripe bananas with a potato masher or fork. In a separate bowl combine the brown sugar, eggs, oil, and mashed bananas. Mix until well combined. Add the dry ingredients to the wet ingredients and fold together until just combined, do not over mix. Pour the banana bread batter into a loaf tin and bake for 60-65 minutes at 180C or 350F. Leave to cool for 10 minutes in tin before turning out on a wire rack.
