Ingredients –

1 Tbsp (15ml) – Olive Oil
3 Tbsp (42g) – Clarified Unsalted Butter, Melted
1 Kg (2.2lb) – Red Rascal Potatoes (See Note Below)
5 – Rashers of Streaky Bacon, Diced
1 Cup (90g) – Mozzarella Cheese
Seasoning to Taste
Garnish with Flat Leaf Parsley, Sour Cream, and/or Spring Onion (Scallion)

Notes –

Starchy potatoes are the best for Hash Browns as they break down when cooked, becoming nice and fluffy on the inside and golden and crunchy on the outside. The best potatoes to use are Russet, Dutch Creams, King Edwards, or Red Delights. However, great all-rounders like Red Rascal, Golden Delight, Coliban, and Sebago are also great. Don’t use waxy potatoes like Red Pontiac and Desiree because when cooked, they don’t break down, which makes them unsuitable for Hash Browns.
