This is a Chicken & Mushroom rice casserole made with coconut milk…
Easy baked chicken rice that is totally worth giving a try. Instead of using heavy cream as in many recipes, I am using a healthier option here, Coconut Milk! These ingredients are easy to find in your kitchen & they are very easy to make!

INGREDIENTS:

For Chicken Seasoning:
-4 skinless, bone-in chicken thighs
-1 tsp Garlic powder
-1/2 tsp Chili powder
-1/2 tsp Paprika
-1/2 tsp Cajun spices (substitute-curry powder)
-1/2 tsp Salt
-1/4 tsp dried Rosemary
-1/2 tsp Black pepper
-2 tsp of Soy sauce

Remaining Ingredients
-300g Mushrooms(I am using button mushrooms, I have cut bigger mushrooms in half, kept small mushrooms in full)
-300g (11/4 cup) Rice, using Basmati rice washed and drained
-2 cups (475ml) Chicken broth, using organic, low sodium
-1 cup (236ml) thick Coconut milk
-2 tbsp of Flour, using all-purpose flour as a thickening agent
-1/2 large Onion cut in cubes (or one medium)
-2 Garlic cloves sliced
-1 tbsp of Butter
-2 1/2 tbsp Vegetable oil (using 2 tbsp to brown chicken, 1/tbsp before adding flour)
-1/4 tsp Salt
-1/2 tsp Black Pepper
-1 stick Rosemary (optional)
-1 cup Parsley

*It’s better to marinate chicken at least for an hour before browning. I marinade for 2 hours in the fridge. You can take it out of the fridge 15 minutes before cooking (not a must)
*Adjust the cooker temperature as needed. I am browning the chicken in medium heat which works well for me and doesn’t burn the chicken. This might change from each stove.
*I am adding flour as it is a thickening agent, cook the flour for a few seconds to get rid of the raw flour smell & taste.

I am using a 12×8 baking dish
Medium size skillet

Bake in 350F degrees (180C) for 40 minutes covered with foil & 15 minutes uncovered
