Cowboy casserole 🤠 #shorts
Ingredients

– 1kg beef mince
– 1 onion, diced
– 1 carrot, diced
– 1 red pepper, diced
– 1 corncob
– 2 tbsp veg oil
– 1 tbsp smoked paprika (you can also use any bbq seasoning you have)
– 1 tbsp garlic powder
– Salt and pepper to taste
– 100g grated parmesan
– 1 tin of black beans (optional)
– 1 bag frozen tater tots (aka potato gems)

Method

1. Sauté your onions in a heavy-based pot with some salt.
2. Once your onions are translucent, add the rest of the veg and sauté.
3. After 4-5 minutes, remove from the pan and set aside.
4. Add a little bit more oil to the pot and brown off your beef.
5. Once your mince is nice and brown, add the veg back to the pot and season with the smoked paprika, garlic powder and salt.
6. Add 1/2 cup of water (or chicken stock if you are feeling boujee) and continue to cook for 25 minutes.
7. Add an optional can of drained black beans in the last 10 minutes (great way to bulk out the meal for cheap).
8. Place this into an oven-safe dish and cover with tater tots.
9. Bake in a 180°c oven for 25-30 minutes or until the tater tots are golden brown.
10. Remove from the oven and add your grated cheese to the top. Place back in the oven for 10-15 minutes or until golden brown.
11. Enjoy!
