A cold noodle salad that’s also perfect for #mealprepping! I love the peanut dressing – you can make a whole jar and use it for the week on this noodle salad, rice bowl, or even as a dip for rolls or whatever else too. I could eat it by the spoonful it’s so yummy 😋. Here’s the recipe:

1 bunch dried noodles, cooked and drained
(udon, ramen, soba all works)
shredded carrots
celery
bok choy or leafy green
watermelon radish
protein of choice (chicken or tofu are my fav)

peanut sauce dressing
1/4 cup peanut butter
1/4 cup soy sauce
2 tablespoons maple syrup
2 tablespoons lime juice or rice vinegar
1 tablespoon sesame oil
1 clove garlic
2 tsp ginger, minced
2-3 tablespoons water or neutral oil (depending on how you prefer your dressing – if you like it oily, add more oil, if you like it thin and watery, add water).

Add everything to a cup and use a hand blender to make it nice and smooth. You can also add to a blender. Transfer to a jar and keep for 3-5 days in the fridge.

Toss your favorite salad ingredients and top with some chili onion crunch! it’s the best a little spicy 🌶
