Firecracker Beef & Broccoli | High Protein Low Carb Meal Prep
This firecracker beef and broccoli is such an incredible dish and is so easy to make. Its high in protein, low in carbs, cheap to make and doesn’t use pretentious ingredients that are hard to find. Along with the firecracker beef and broccoli, is a healthy cauliflower rice which is an alternative to regular rice in this case. It partners extremely well with the beef and absorbs the sauce incredibly well which creates delicious flavour. Please enjoy.

Serves – 5
Ingredients –

Cauliflower Rice –

1 Tbsp (20ml) – Peanut Oil
1 – Large Cauliflower, Trimmed & Rinsed
10g (0.35oz) – Ginger, Peeled & Minced
7g (0.25oz) – Black & White Sesame Seeds (Optional)
1 1/2 tsp (7.5ml) – Sesame Oil
Seasoning To Taste

Firecracker Beef & Broccoli –

1/2 Tbsp (10ml) – Peanut Oil
1kg (2.2lbs) – Beef Mince (Ground Beef) – 90/10
4 – Garlic Cloves, Minced
2 – Medium/Large Broccoli, Trimmed
1 tsp (1g) – Chilli Flakes (Optional)
3 1/2 Tbsp (70ml) – Light Soy Sauce
3 1/2 Tbsp (70ml) – Apple Cider Vinegar
4 1/2 Tbsp (90g) – Sriracha Sauce
2 1/12 Tbsp (35g) – Brown Sugar
1/2 Cup (125ml) – Chicken Stock
Seasoning To Taste

Notes –

Peanut Oil –

The peanut oil can be substituted with olive oil (Not EVOO) or grape seed oil or vegetable oil.

Alcohol Substitutes –

The apple cider vinegar does contain traces of alcohol. This can be substituted for regular white vinegar or if alcohol isn’t a concern but you can’t get apple cider vinegar for any reason, rice wine vinegar can be used.

Chilli Alternatives –

You can use pretty much any chilli sauce of your liking for this recipe, however if you’re not a fan of chilli, it can be left out. If you are to leave it out, increase the amount of light soy sauce and vinegar to 100ml of each.

Cauliflower Rice –

This is a great low carb alternative to regular rice. The recipe altogether is fantastic how it is but you can use regular rice if you prefer. It’s still just as good.

Storage –

Allow the containers to slightly cool before covering and placing In the fridge. They will last up to 4 days in the fridge and 4 months in the freezer. If you use the vacuum pump that the meal prep containers I use have, they will last an extra day. You can find the container & pump here – />
Reheating –

Reheating is really simple, place it into a microwave, in bursts, until hot throughout or place it into a pan over medium heat.
