200g – Penne or pasta of your choice
1 Tbsp (15ml) – Olive Oil
1 – Small Brown Onion, Thinley Sliced
2 Cloves – Garlic, Thinley Sliced
1 – Long Red Chilli, Deseeded and Thinley Sliced
4 Sprigs (3g) – Thyme, Roughly Chopped
200g – Portabello Mushrooms
300g (1/2) – Cauliflower
2 Tbsp (30ml) – White Wine (Can be substituted for Vegetable stock)
5g – Flat Leaf Parsely, Roughly Chopped (1/4 saved for garnish)
100g – Ricotta Cheese
1 – Lemon, Zest Only
Season to taste
Parmesan Cheese to serve
Extra Virgin Olive Oil to serve
