How to make Pasta All’Amatriciana. This recipe is so easy to make, tastes fantastic and is also really cheap. Amatriciana is a tomato sauce that traditionally uses Guanciale (Pork Jowl or Pig Cheek) but in this case we use Pancetta. Bucatini Pasta is then tossed through the sauce to create a wonderful fresh and full of flavour dish that’s then topped with Pecorino Cheese, fresh Basil and freshly cracked Black Pepper. Serves – 2
Ingredients –
150g (5.2 Ounces) – Guanciale or Pancetta or Bacon, Sliced Into 1cm Strips
1 Can (400g) – Whole Tomatoes (In Juices), Crushed
1 Tbsp (15ml) – Olive Oil
30ml (2 Tbsp) – White Wine or Chicken Stock or Vegetable Stock
300g (10.5 Ounces) – Bucatini Pasta or Spaghetti
Seasoning to taste
1 tsp (4g) – White Sugar (Optional)
Pecorino Romano Cheese to serve
Fresh Torn Basil to serve
Extra Virgin Olive Oil to serve
Cracked Black Pepper to serve
