Makes – 8-10 Pizza Bases
Ingredients –
2 tsp (7g or 1 Sachet) – Instant Dry Yeast
1 Tbsp – Granulated Sugar, Split Into 1 tsp (5g) & 3/4 Tbsp (16g)
1 1/3 Cup (330ml) – Lukewarm Water (38.c – 100.f)
1/3 Cup (80ml) – Extra Virgin Olive Oil
750g (1.6lb) – Bread Flour or 00 Flour
1 1/2 tsp (7.5g) – Sea Salt Flakes
How To Make By Hand –
Add the Instant Dry Yeast, Granulated Sugar & Lukewarm Water into a large mixing bowl and whisk to combine. Cover with a tea towel and allow to sit for 5 minutes.
Remove the tea towel and add in the Extra Virgin Olive Oil, Bread Flour & Sea Salt Flakes. Using a wooden spoon or your hands, mix the ingredients thoroughly just until they have come together.
Tip the dough onto a workbench and push down on the dough folding it in on itself. Repeat this process for 5-6 minutes or until your dough has formed a nice smooth ball and is really wet or dry. (Only add flour to the workbench unless you really have to) Continue recipe as per instructions.
Recipe Notes –
Once you have allowed the dough to proof for 4 1/2 half hours, you can place the whole dough in the fridge (2 weeks) or freezer (3 months) or use it straight away.
Alternatively, you can portion the dough into even-sized balls and freeze them in a snap-lock bag, doing this makes it a lot less fuss when it comes to removing them from the freezer. If they’re already portioned you can remove however many dough balls you require instead of having to defrost the whole amount.
Plain Flour can be used for this recipe but the dough won’t be as stretchy and soft due to the low levels of protein in Plain Flour.
