Roasted Cauliflower Taco Bowl Meal Prep
This roasted cauliflower taco bowl meal prep is something a little bit different to bring to the meal prep series. Its a vegetarian focused meal prep recipe but can easily have your favourite proteins added if you’d like to. This roasted cauliflower taco bowl is easy to make, doesn’t take a whole lot of time and its cheap. It will also set you up comfortably for the week or weeks ahead depending on how you choose to store it. Please enjoy.

Makes – 5

Ingredients –

Coriander Lime Sauce (Mayonnaise) –

1 – Whole Egg
1 tsp (10g) – Dijon or Yellow Mustard
2 1/2 tsp (15ml) – White Vinegar
200ml – Neutral Flavoured Oil (I Used Grape Seed Oil)
2 1/2 Tbsp (50g) – Sour Cream
10g (0.35oz) – Coriander (Cilantro), Roughly Chopped
1 – Lime, Juiced (Zest Can Be Used)
Seasoning To Taste

Cauliflower Taco Bowl –

2 1/2 Tbsp (50ml) – Olive Oil
1 – Large Head Cauliflower, Florets & Stems Trimmed
1 1/2 tsp (4g) – Smoked Paprika
1 1/2 tsp (4g) – Ground Cumin
1 tsp (1g) – Dried Oregano
1/2 tso (1g) – Red Chilli Powder (Optional)
Seasoning To Taste

Rice, Corn & Black Beans –

300g (10.58oz) – Basmati Rice, Washed
600ml – Cold Water
Salt To Taste
1 Can (400g-14.1oz) – Corn Kernels, Drained
1 Can (400g-14.1oz) – Black Beans, Drained & Rinsed
Spring Onion (Scallion) To Serve (Optional)
Coriander (Cilantro) To Serve (Optional)
Seasoning To Taste

Recipe Notes –

If you wish to make this recipe with fresh corn, use 2, whole corn on the cobs. Remove the husks and carefully slice of the kernels. Rinse under cold water and continue the recipe as per instructed.

The coriander lime sauce (mayonnaise) contains a fair amount of fat. If you didn’t want to make this, you can use low fat store bought mayo and mix through the remaining ingredients. Alternatively, you can use a store bought ranch sauce, chilli sauce or any of your favourite sauces. Buffalo sauce also works really well.

The cauliflower can be cooked in an air fryer if you prefer.

Storage & Reheating –

To store, place the meal prep containers in the fridge for up to 5 days and in the freezer for up to 4 months. Thaw overnight in the fridge before reheating.

To reheat, place in the microwave until hot or place into a pan and create a stir fry style taco bowl. It can also be eaten cold if you wanted to take it out and about with you. Please note, if eating cold, it’s not as good.
