Ube Brazos | Brazo de Ube
For the love of UBE! Ube has been my favorite because of it’s unique aroma. I used it in almost dessert i could remember. This Ube Brazo recipe that I will share is a bomb. Here is the complete ingredients and some baking tips:

Brazo meringue:
8 egg whites
1/2 teaspoon cream of tartar
1/2 cup granulated sugar
1 tablespoon concentrated ube flavoring

Brazo filling:
6 egg yolks
1 can condensed milk
1/4 cup milk (fresh or evap)
1 cup mashed ube
1 tablespoon concentrated ube flavoring

Bake at 170 C for 15-20 minutes. I used 9×13 baking pan in this recipe.

Baking tips:
1. We will start whipping egg whites on low speed for 2 minutes to prevent big air bubbles that will cause our meringue to shrink.
2. `Always use new eggs for baking, approximately 5 days old egg.
3. Make sure that your bowl and beater are dry and clean.
4.Only use metal or glass bowl for mixing because plastic bowl can easily absorb grease and fat that can prevent the volume of the meringue.
