Vegan Pumpkin Spice Bread
Ingredients:
1 tbsp flax
2 c pumpkin purée
1/3 c apple sauce
1/3 c brown sugar
1 tsp fresh minced ginger or powdered ginger
1 1/2 c wheat flour
1/2 tsp baking soda
Vanilla to vibe
Sprinkle salt
Pumpkin spice to hearts desire
Pinch nutmeg

Directions:
1. Set your oven to 350 and add your flax seed and 3 tbsp water to a small bowl, mix and set aside to thicken.
2. Meanwhile add your pumpkin, apple sauce, brown sugar, vanilla, ginger, pumpkin spice, nutmeg, salt and flax egg to a large bowl and mix.
3. Next add your dry ingredients: wheat flour and baking soda and a mix
4. Now you can freestyle and add nuts, dried fruits or chocolate.
5. Bake for 1 hour or until a toothpick comes out clean
