Ingredients –
Dressing-
100ml (1/3 Cup +1 Tbsp) – Fish Sauce
125ml (1/2 Cup) – Water
100g (3.53oz) – Granulated Sugar
6 – Kaffir Lime Leaves
15g (0.53oz) – Ginger, Chopped
2 – Garlic Cloves, Crushed
Chicken & Salad –
1 – White Onion, Thinly Sliced
2 – Medium Carrots, Julliened
150g (5.29oz) – Mung Beans
80ml (1/3 Cup) – Rice Wine Vinegar
20g (0.71oz) – Sugar
300g (10.58oz) – White Cabbage, Chiffonade
300g (10.58oz) – Red Cabbage, Chiffonade
25g (0.88oz) – Mint Leaves
25g (0.88oz) – Coriander (Cilantro)
3 – Chicken Breast, Sliced & Torn
1 – Lime, Cut Into Wedges
Chilli (Optional)
100g (3.53oz) – Peanuts, Chopped & Toasted
Seasoning To Taste
Notes –
Peanuts, lime and chilli are optional.
Unfortunately, the fish sauce is a key ingredient in this dish and can’t be substituted. Other dressings such as vinaigrette can be used.
If you can’t consume alcohol, rice wine vinegar can be substituted for regular white vinegar.
