Like a lot of desi kids, I was rarely ever allowed to have maggi, but I’m an adult now and I can make my own decisions dammit 😤

Maggi: This one’s really up to you! You can just use the seasoning packet, but I really enjoy adding a tbsp of soy sauce, a squirt of ketchup, good amount of sambal/chili oil, and some green onions for crunch. I also had black radish so I added it for some sharpness.
Tofu:
1️⃣ Preheat your oven to 425F. Press your extra-firm tofu by putting a towel on top and a heavy book or cast iron skillet on top. Leave for 10min.
2️⃣ In the meantime, in a container with a lid, mix together 1 tbsp cornstarch, 1 tbsp gochugaru, 2-3 tbsp EBTB seasoning, and additional salt to taste if needed (EBTB has salt).
3️⃣ Pat dry your tofu and then cut into whatever shape you want.
4️⃣ Drizzle some avocado oil and rub to coat well. Then put them in the container and shake to mix until all tofu is evenly coated.
5️⃣ Distribute them on a baking sheet with parchment paper and bake for 30 min (or until golden and crispy), flipping halfway through.
Jammy Eggs:
1️⃣ Bring a saucepan with enough water to cover the eggs to a vigorous boil.
2️⃣ Using a slotted spoon, lower in your eggs.
3️⃣ Immediately start a timer (time will depend on the size of your eggs – these eggs were very small so I did 6min but for large eggs I would do 6min 30sec). Maintain a boil.
4️⃣ Remove the eggs and dunk them in an ice bath. Peel or store in fridge.
Oat Banana Pancakes
1️⃣ Blend together 1/2 cup oats, 1 small egg, 1 small very ripe banana, 1 tsp baking powder, 1/4 tsp cinnamon, 1/3 cup milk, splash of almond extract, pinch of salt.
2️⃣ Cook until golden brown – eat warm, refrigerate, or freezer also works great!
